A few of my favourite go to, simple recipes. I will update from time to time so keep checking back!
Tomato & Lentil Soup: 3 ingredients



Ingredients (makes 2 bowls):
- 115g Red Lentils
- 1 can Tinned Tomatoes
- 375ml Vegetable Stock
How to make:
- Throw all ingredients into a pot. I use these pots which are space saving.
- Allow it to bubble away for 2-25mins (check it part way through, add more water/stock if needed)
- Remove from heat
- Blend
Serve & Enjoy!
Top tips:
- You can make a batch at the start of the week and store in glass containers, lasts up to 4 days
- You can ‘pimp’ it up. The original recipe included onions, carrots and celery – I found it sweetened it too much for me. And you can add chilli if you fancy a something a bit more spicy
